Foxnut Harvesting Process
Makhana (Foxnut) is harvested from the Euryale Ferox plant, which grows naturally in large, shallow ponds and wetlands, especially in the Mithila and Seemanchal region of Bihar, India. The harvesting process is skilled, traditional, and labor-intensive, requiring deep knowledge passed down through generations.
1. Cultivation in Water Bodies
Makhana plants are grown in still or slow-moving water bodies. The broad leaves float on the surface while the seeds develop inside the plant’s thorny fruit pods under water.
2. Collecting the Seeds
Farmers enter the ponds during harvest season and use traditional tools to collect the mature seeds from beneath the water surface.
This requires experience and technique, as the seeds settle at the bottom of the pond.
3. Cleaning & Sun-Drying
The collected seeds are washed to remove mud and impurities.
They are then spread out and sun-dried to reduce moisture and prepare them for popping.
4. Roasting
The dried seeds are slow-roasted in hot sand at controlled temperatures.
This step is crucial — it softens the seed internally and prepares it for popping while preserving its nutritional value.
5. Popping
After roasting, each seed is tapped or pressed to pop open — similar to popping popcorn.
This step transforms the hard black seed into the light, white, fluffy Makhana we recognize.
6. Grading & Sorting
The popped makhana is then graded by size, texture, and quality.
Larger, round, and evenly popped makhanas are chosen for premium snack products.
7. Flavoring & Packaging
Finally, the makhana is packed in airtight, freshness-sealed pouches to maintain crispness and flavour.
